A little ginger humor…
Yesterday: a classic.
Today: a twist.
I give you: ginger snowballs!
Crushed up gingersnaps mixed up with a few of my favorite things become a new-to-me holiday treat that I’m loving right now.
Plus it only takes 3 ingredients and a couple of minutes!
Which is good because the holidays come with loooonnnngggg to do lists that never seem to become to DONE lists and always cost a lot of money.
I don’t know about you, but sometimes I start to feel a little out of control.
So here’s a little taste of calm in the chaos
Gingersnaps in an orderly 5×4 array.
Look at those straight lines and even numbers!!
(Deep breaths)
Now pulverize them…a nice stress reliever.
Throw in some peanut butter and honey…
Make little balls…then make em snowy!
(with some powdered sugar)
That’s it! You’re done!
Little snowball cookies…in two straight lines.
Don’t stress!
Make lists!
Line your cookies up in straight rows!
Then eat one.
Or ten…
Do what you gotta do.

Ginger Snowballs
Recipe from No Bake Gingersnap Snowball Cookies
20 gingersnaps
3 tablespoons honey
2 tablespoons peanut butter
powdered sugar for rolling
1. Put the gingersnaps in a zip lock back and crush them with a rolling pin until there aren’t any more large chunks
2. Stir in the honey (or syrup!) and peanut butter until everything is really well combined and will hold together in a ball
3. Roll the mixture into balls and roll in powdered sugar, evenly coating the outside (you know…until they look like snowballs……..)
